Prosciutto San Danielle

Italy is well known for its meat-based delicacies, but prosciutto of San Daniele variety is in a league of its own.

The production is strictly controlled and regulated, using age-old ways and traditions, including selecting just the right breed of pig, salting the ham by hand and letting it cure only in the small town of San Daniele di Friuli. This last thing is important because, in Friuli, the microclimate of the salty sea breeze and mountain air creates an ideal setting for the aging of the prosciutto. Best enjoyed with aromatic white wines and mild fruit.
